MAKING AND USING VINEGAR by Bill Collins

“The word vinegar, translated from the French, means “sour wine.”

While reading this book, you will be able to create your own flavorful vinegar variations to use in personal recipes. Some of the essential kitchen vinegars- apple cider, balsamic, red wine, rice, and distilled white can flip many recipes into a gourmet dish.

Vinegar uses vary depending upon your use and need, such as an all-purpose cleaner, clearing drains, coffeemakers, or copper pots, dishwashers, and wooden cutting boards to name a few. 

Making your own vinegar is a simple task starting with a clear glass jar, vinegar mother, fermented liquid, and cheesecloth. There are directions for vinegar fusions such as garlic, chile, raspberry, dessert, and orange.

I never realized there are drinkable vinegars called shrubs. In this book , there are three ready-to-make recipes for Mango, Chocolate and Strawberry Shrubs. I, personally, would like to try my hand at the Mango shrub recipe.  In addition, recipes for pickling, dressings, chutneys, salads, and appetizers are included. The section on sides and main dishes include Marinated Flank Steak and Braised Lamb Shanks. Desserts include chocolate chip cookies and butter cookies.

With easy-to-read recipes and instructions makes this book worth the read. This would be a significant addition to any cookbook collection and a great gifting opportunity.  I certainly recommend to those who enjoy creating recipes from scratch using simple ingredients.
